Job Description:
We are seeking a skilled Tuna Cutter with proven experience working with high-grade tuna. In this role, precision and consistency are critical, as tuna is one of the most valuable seafood products. The ideal candidate will be detail-oriented, reliable, and experienced in maintaining high standards for both product quality and safety.
Responsibilities:
Butcher and portion fresh whole tuna according to company and industry standards
Ensure consistent product cuts, optimal yield, and minimal waste
Inspect tuna for quality, freshness, and abnormalities throughout the cutting process
Maintain a clean and sanitary workstation at all times
Follow all safety and food handling procedures
Properly package and label finished cuts for delivery or storage
Use and maintain professional-grade cutting tools safely and effectively
Collaborate with team members to meet daily production goals
Requirements:
Minimum 2 years of experience cutting tuna or similar high-value fish
Exceptional knife handling and butchering skills
Familiarity with HACCP and food safety regulations
Comfortable working in a cold, fast-paced environment
Ability to lift up to 50 lbs and stand for extended periods
Strong attention to detail and quality
Dependable and punctual, with availability for early morning shifts
